Truffles, wine and Merenda sinoira d'autore" at the Castle of Roddi

25 chefs involved in 10 live shows: “Eccellenze del Piemonte in Vetrina” is the latest addition to the 90th edition of the International Alba White Truffle Fair. The pilot project within the “Truffle Hub” of the Castle of Roddi, in the Alba area, a prestigious historical location and virtual location of the Food&Wine Digital Experience.

The territory and the entire Piedmont region was digitally communicate with the world from its kitchens, offering experiences of fusion between food and wine, history, culture and art.

Here, the Alba White Truffle became the focus of the “Merenda sinoira d’autore”: a refined version of that typically Piedmontese meal that is eaten between the afternoon snack and the evening meal.


In an entirely digital format – which is essential due to the current health situation – some of the best chefs working in Piedmont were interpreted the Alba White Truffle in combination with a selection of traditional Piedmontese food products, in a "merenda sinoira" version with their own signature touch. This was accompanied by the typical oenological excellence of the 7 local areas that went on show: Turin, Alessandria, Cuneo, Langhe Monferrato and Roero, Novara; Biella, Valsesia and Vercelli; Verbano-Cusio-Ossola and the Lakes.

The chefs taking part in the project were engaged in a sort of "jam session" on the digital set created in the kitchens of the Castle of Roddi, preparing their proposals in dialogue with Regional Wine Shops, sommeliers and producers that were also on set. A panorama of photos and videos of the individual territories were the backdrop to the preparation of the recipes and the description of the products. To make the experience more engaging, Italian and foreign journalists and influencers in the fields of lifestyle, tourism and food and wine were connected live and  tried their hand at preparing a Piedmontese dish, receiving the “Merenda Sinoira d’Autore” kit, containing the ingredients and the recipe at home. All the meetings, recorded and prepared in post-production, are shared on Facebook and the social channels of the various project partners, so as to involve the general public.

Chefs and their recipes:

  • Monday 30th November at 4.00 pm: presented by the Distretto Turistico dei Laghi (Tourist District of the Lakes), chef Giorgio Bartolucci from Atelier* in Domodossola, will prepare a recipe with Bettelmatt cheese produced by Rachele Matli. At his side, the Consorzio Tutela Nebbioli Alto Piemonte (Consortium for the protection of Nebbiolo)


  • Monday 7th and Thursday 10th December at 4.00 pm: presented by the Langhe Monferrato and Roero Tourist Board, chefs Michelangelo Mammoliti from La Madernassa** in Guarene; Davide Palluda from All'Enoteca* in Canale; Gabriele Boffa from Relais Sant'Uffizio* in Cioccaro di Penango; Luca Zecchin from Ristorante Guido del Relais San Maurizio* in Santo Stefano Belbo; Pasquale Laera from Ristorante Borgo S. Anna* in Monforte d'Alba; Damiano Nigro from Relais Villa d'Amelia* in Benevello; Andrea Larossa from Ristorante Larossa* in Alba; Marc Lanteri from the Castle of Grinzane Cavour; Walter Ferretto from Il Cascinale Nuovo in Isola d'Asti*; Flavio Costa from Ristorante 2.9 di Tenuta Carretta* in Piobesi d'Alba will create recipes with the hunchback thistle of Nizza Monferrato. At their side will be the Regional Wine Shop of Barbaresco, Regional Wine Shop of Barolo, Regional Wine Shop of Nizza Monferrato, Regional Wine Shop of Canelli and Astesana, Regional Wine Shop Piemontese Cavour, Regional Wine Shop of Roero, Regional Wine Shop Colline Alfieri and Astigiano.


  • Friday 11th December at 4.00 pm: presented by ATL Alexala, chef Sara Chiriotti from I Caffi* in Acqui Terme will prepare a recipe with Robiola di Roccaverano and Montebore cheeses. At her side: Regional Wine Shop of Ovada and Monferrato, Regional Wine Shop Acqui "Terme e Vino", Regional Wine Shop of Monferrato.


  • Monday 14th December at 4.00 pm: presented by ATL of Novara, chef Marta Grassi from Tantris* in Novara will prepare Gorgonzola, Carnaroli Rice and Slow Food Presidium Cureggio Fontaneto blond onion. At her side will be the Consorzio Tutela Nebbioli Alto Piemonte (Consortium for the protection of Nebbiolo)


  • Thursday 17 December at 4.00 pm: presented by ATL Cuneese, chefs Massimo Camia of the homonymous restaurant in La Morra, President of the Italian Chefs Federation – Cuneo branch; Bruna Bartolo from La Pace in Sambuco; Luciano Gautero from Il Bagatto in Limone Piemonte; Fabio Ingallinera from Nazionale in Vernante; Erik Macario from La Posta in Pradeboni, will each prepare their own recipe linked to the tradition of the Cuneo valleys.


  • Friday 18th December at 4.00 pm: presented by ATL Biella, Valsesia Vercelli, chef Christian Costardi from Ristorante Christian & Manuel* at Hotel Cinzia in Vercelli, will prepare a traditional dish in which rice will be the main ingredient. At his side the Regional Wine Shop of Gattinara.


  • Monday 21st December at 4.00 pm: presented by ATL Turismo Torino e Provincia, chef Mariangela Susigan from Ristorante Gardenia* in Caluso will prepare a recipe with salampatata del Canavese (potato salami) and with chestnuts from Val di Susa, served with Erbaluce di Caluso Passito (raisin wine) from the Wine Shop of the Province of Turin.

The initiative, co-organised by VisitPiemonte in partnership with the International Alba White Truffle Fair Authority, will involve Piedmontese michelin-starred and haute cuisine chefs, the Local Tourist Agencies and the AIS Italian Sommelier Association of Piedmont.
