Truffle Tour


Six dining events open to the public, one in each province, will showcase the White Truffle of Alba, pairing it with the finest local specialities thanks to a tour of six starred restaurants. The chefs will apply their creative flair to preparing ingredients with a contemporary touch at each event, creating original and unique haute cuisine experiences.

16 November | Chef Alfredo Russo, Ristorante Dolce Stil Novo*, Venaria Reale (TO)

Alfredo Russo is in charge of the kitchen at the Ristorante Dolce Stil Novo*, inside the Reggia di Venaria Reale. His innovative and highly personal philosophy, strongly inspired by tradition, has placed his restaurant at the forefront of world cuisine. Within a setting reminiscent of palace banquets, he presents a "variation on a theme" of classic Piedmontese recipes accompanied by the White Truffle of Alba.

The chef's approach highlights the Alto Monferrato terroir and pays particular attention to seasonality. His innovative cuisine focuses on reinterpreting classic recipes using organic products sourced locally. A tribute to tradition revisited from a creative perspective and paired with the White Truffle of Alba.
