It was King Carlo Alberto who first created a proper farm with vineyards and wine cellars, where the wine-making techniques experimented at the time are now still in use for the principal reds of the Langhe district. He also remodelled the entire medieval Pollenzo as hamlet which includes the piazza, the church, the tower and the "Albertina Farmhouse". The complex, promoted by Slow Food, now accommodates the University of Gastronomic Sciences, the Bank of Wine and the hotel of the Agenzia di Pollenzo.
